These scalloped potatoes have something for everyone! Made crispy and golden brown, this 6-ingredient recipe is perfect as a spicy-sweet side dish. Serve it to feed large crowds alongside your favorite chuck roast or pulled pork recipes.

Sweet potatoes are a nutritious side dish you won’t believe is good for you. They include a satisfying starchy flavor (similar to white potatoes) and lock in natural sweet flavor when roasted. High in fiber, these spuds are full of antioxidant-rich nutrients and can satisfy any appetite.

The key to this recipe is slicing the potatoes into very thin rounds and arranging them like dominoes within a casserole dish. This helps to create a crinkled top with a slight crunch. For easy prep, you can use a mandoline slicer to thinly slice the potatoes with more consistency.

Opting for avocado oil is the best choice for this recipe because of its ability to withstand high-heat temperatures. You can use it for recipes requiring roasting or sautéing to avoid the risk of burning. Best of all, it comes with many heart-healthy benefits to keep your dish fit and delicious.

To get started, stir together the ingredients for the sauce. Mix together the avocado oil, maple syrup, paprika, sea salt, and cayenne pepper. Arrange the sweet potatoes in a medium casserole dish, lining the edges and center. Slightly fan out the potatoes to allow space for the sauce to drip through.

Next, drizzle with half of the sauce and bake for one hour and ten minutes. When the potatoes are ready, they’ll start to crinkle on top and turn golden brown. After removing from the oven, drizzle the remaining sauce on top to seal in extra flavor. Use a large spoon to serve portions and store any leftovers in an airtight container for up to one week.

To reheat: Preheat oven to 300ºF and add potatoes to an oven-safe dish. Place on center rack of oven and bake for 15 minutes.

Tip: For heat lovers, you can increase the cayenne pepper to ¼ teaspoon.
